Hiyashi Chuka with Sesame Flavored Dressing

Boiled and chilled Chukamen noodles are served with sesame flavored dressing. There are many other choices for toppings.
Ingredients:
(2 servings)

* 2 packages of Chukamen noodles
* 1 boneless, skinless chicken breast
* 1 Tbsp sake
* 1 small cucumber, cut into thin strips
* 1 tomato, cut into wedges
* 2 boiled eggs, peeled and cut in half

For Dressing:

* 1 1/2 Tbsp roasted white sesame seeds
* 3 Tbsp rice vinegar
* 1 Tbsp sugar
* 1 tsp peanut butter
* 2 Tbsp soy sauce
* 3 Tbsp water
* 1/4 tsp sesame oil

Preparation:

Poke chicken with a fork. Place chicken on a microwavable plate and sprinkle sake. Cover with plastic wrap. Cook in the microwave for 3 to 5 minutes until cooked through. Let it cool. Tear the chicken into thin strips and set aside. Place sesame seeds in a suribachi mortar and grind them with a surikogi pestle. Or, place sesame seeds in a blender or food processor and grind until smooth. Add rice vinegar, sugar, and peanut butter. Mix until combined. Further, add soy sauce and water and mix. Pour sesame oil. Cool the dressing in the refrigerator. Boil water in a large pot and boil Chukamen noodles for a couple minutes, or follow package directions. Drain and cool the noodles in cold water. Drain well. Serve cold noodles on individual plates. Top with chicken, boiled egg, cucumber, and tomatoes. Pour dressing over noodles just before eating.
