Most of Japanese people eat rice as a staple food at least twice a day.I introduce you to cook tasty boiled rice.

1:Washing rice (Kome o togu)
Put rice to the bowl and add cold water and stir it quickly. Pour off the opaque water.(Don’t put rice in the opaque water. Rice absorb bran)

2:Fill the bowl with fresh cold water and press the rice 20 times with the heel of palm to make rice rub against each other. Then Pour off the opaque. Repeat this few times until water become almost clear.

3:drain the rice at least 30 mins. This process make rice full and tasty.

4:Transfer the rice to a rice cooker add water to cover rice and turn on the cooker. Rice needs to settle after turned off.
( most of rice cookers do the whole process automatically lately)

5:Open the rice cooker and gently overturn and mix rice with wet Shamoji(a flat rice paddle). This process let off the steam inside the rice and make it more crisp and full.
