Egg and Enoki Stir-fry

This stir-fry dish is made with eggs, enoki mushrooms, and nira (garlic chives). It's flavored with miso and is slightly sweet. Nira is often stir-fried with eggs in Japanese cooking. If you like enoki mushrooms and nira, try this dish. It's a good dish to serve with steamed rice for breakfast.

Ingredients
(2 servings)

* 1 bunch nira chives, cut into 2 inch lengths
* 1 enoki mushrooms, about 1/2 lb, trimmed and cut into 2 inch lengths
* 2 eggs, beaten
* 1 1/2 Tbsp miso
* 1 Tbsp mirin
* 1 Tbsp vegetable oil

Preparation

1. Mix miso and mirin in a small cup and set aside.
2. Heat vegetable oil in a skillet on high heat.
3. Stir-fry nira chives and enoki mushrooms until softened.
4. Pour beaten eggs.
5. When eggs begin to set, stir-fry them.
6. Add miso seasoning and stir lightly.
