Clams cooked in 'natane' style / JAPANESE HOME COOKING

"Asari" clams that are coming into season and rapeseed flowers ("natane" or "nanohana") are a best match in March, when cold and warm days alternate. According to Japanese cooking expert Tatsuo Saito, beaten egg spreads in the stock when it cooks, resembling a field of rapeseed flowers. "It is best if the egg is cooked through instead of half-cooked," he adds.

INGREDIENTS
(serves two)

* 250 grams of clams (asari)
* 1 bunch rapeseed flower (nanohana)
* 2 eggs
* 100 cc water
* 50 cc sake
* 2 tsp mirin (sweet sake)
* 1 tsp light soy sauce

METHOD

Remove sand from clams by soaking in salt water for a few hours. Wash thoroughly by rubbing the shells together.

Cut off a bit of the bottom end of the rapeseed flower and then cut the length in half. Soak in cold water for five minutes to make them crisp. Bring water to a boil, add a little less than 1 tbsp salt (not listed above) per 1 liter water. Add stem first, then the tip after a pause. Boil for about 30 seconds, check if the stem is springy when pushed. Remove and immerse in iced water immediately. When cooled, squeeze out water.

Break egg and whisk well.

Place clams, water and sake in a pot, close the lid and place over fire. Remove lid when it comes to a boil and remove each clam once it opens. Place a few sheets of paper towel on a sieve and strain stock through the sieve.

Return stock in the pot, add mirin and light soy sauce and bring to a boil over medium heat. Add the rapeseed flowers. When the pot comes to a boil again, add clams and mix. Taste soup and adjust flavor. When the liquid is boiling in the center of the pan, pour in the beaten egg slowly in a circular motion. When the egg floats up, switch off stove, close the lid and wait for 20 seconds for the egg to fully cook. Serve in a bowl with the stock.
