Cheap and easy stir-fried bean sprouts with pork / JAPANESE HOME COOKING

Bean sprouts are an economical ingredient, yet they can easily becomes soggy or bland. Removing the roots improves the flavor, but doing so is cumbersome.
"You can remove some of the roots by soaking the sprouts in water and draining them in a sieve by hand," says chef and restaurant owner Tomoshige Ichikawa.
Ground pork flavored with "tian mian jiang," or sweet bean sauce, will add zest. Stir-fry swiftly to keep the sprouts crisp.

INGREDIENTS:
(serves four)

* 1 bag (250-300 grams) bean sprouts (moyashi)
* 50 grams onion
* 40 grams garlic chives (nira)
* 30 grams carrots
* 60 grams ground pork
* 1/2 tsp each of finely chopped ginger and garlic
* Seasoning for pork (1 Tbsp sake, 1 tsp each of soy sauce and tian mian jiang)
* Seasoning for the stir-fry (1/2 tsp sugar, 1 Tbsp sake, 2 Tbsp soy sauce, dash of coarse ground black pepper, 1 tsp water, 1/2 tsp katakuriko starch, 2 tsp sesame oil)

METHOD:

Slice onion. Cut carrots into julienne strips. Cut garlic chives into lengths of 3 to 4 cm. Wash sprouts to keep them crisp and drain.

Mix seasoning for pork in a small bowl.

Heat 1 Tbsp cooking oil (not listed) in a frying pan, add ground pork and stir-fry over low heat. Add pork seasoning when the meat comes apart and changes color. Remove from pan when the seasoning mix has coated the meat.

Mix the seasoning for the stir-fry in a small bowl.

Bring 600 cc water to a boil, pour over sprouts to remove strong flavors.

Pour 1 Tbsp oil (not listed) in the frying pan and stir-fry the onion, carrot, ginger and garlic. When the aroma begins to rise, turn up the heat and add bean sprouts, garlic chives and the ground pork.

Add the stir-fry seasoning mix. Stir-fry for two to three minutes until the seasoning mix has coated the ingredients.
