Two classic potato side dishes / JAPANESE HOME COOKING

This week, I will offer potatoes, those reliable and useful side-dish ingredients. "The 'danshaku' (baron) brand of potato turns flaky and soft when cooked, while the 'May queen' brand retains moisture and shape. It's good to know their characteristics and then choose which you prefer," says cooking expert Masayo Waki, introducing mashed and sauteed versions.

INGREDIENTS:
(Both dishes serve four)

For mashed potatoes:

* 500 grams danshaku potatoes
* 4 Tbsp butter
* 1/2 tsp salt
* 150 ml milk

For sauteed potato:

* 500 grams May queen potatoes
* 2.5 Tbsp cooking oil
* 1/2 tsp salt

METHOD

For mashed potatoes, peel and cut each into 6 to 8 pieces. Soak in a generous amount of water for 5 minutes.

Place in a pot and pour in just enough fresh water to cover. Bring to a boil, then cover with lid and cook over medium heat for about 12 minutes until the potatoes become soft. Slide open the lid to hold the potatoes as you dump out the hot water. Place on burner again to extract excess water. Remove from heat and mash with a whisk.

Add butter and beat with large strokes to add in air. Add salt. Heat milk in a microwave for about 2 minutes, then add to potatoes in 2 to 3 portions. Mix constantly as you add, occasionally replacing the pot over heat to keep the mixture warm.

To make sauteed potatoes, peel and dice May queens into 1.5 cm cubes. Do not soak in water. Pat dry thoroughly.

Pour cooking oil in a frying pan and place over heat. Add potato cubes and stir-fry over medium heat. Sprinkle with salt when the edges are transparent.

Stir-fry until the sides become golden and a delicious aroma rises.
