Roasted chicken rolls add flair to your dining table / JAPANESE HOME COOKING

CHICKEN IS an old stand-by that is sure to satisfy many. Why not jazz it up? This recipe for roasted chicken rolls is simple to make, yet has flair. "It has the same crispy skin and rich stuffing as roast chicken," says chef Masayo Waki. The roll may be fastened by winding string around it instead of using toothpicks.

INGREDIENTS:
(serves four)

* 2 boneless chicken thigh pieces (550 grams)
* 1 tsp salt
* Pepper
* Stuffing (80 grams ground chicken, 1/4 tsp salt, dash of pepper, 1/4 onion, 1 pack shimeji mushrooms, 6 cooked chestnuts or amaguri, 2 tsp cooking oil)
* 2 Tbsp butter, in two pats
* Garnish (1/2 broccoli, 12 red or yellow cherry tomatoes)

METHOD

Remove fat under the skin or between the meat of chicken thighs. Even out thickness by slicing off thick parts and placing upon thin parts. Sprinkle with salt and pepper and leave for 10 minutes.

Cut shimeji into 7-mm slices and finely chop onion. Heat frying pan over medium flame, add oil and when heated, saute shimeji and onion. Add salt and remove when soft. Cool.

Place shimeji, onion, ground chicken and pepper in a bowl and mix well.

Pat chicken thighs dry and lay skin-side down. Place half the stuffing on each piece, place a chestnut at the center and roll. Close with toothpicks in three places or tie with string.

Place aluminum foil on a baking pan and coat thinly with oil. Place chicken rolls on foil and put butter on top. Preheat oven to 230 degrees and bake 10 minutes. Lower temperature to 180 degrees when the rolls turn slightly golden all over. Bake another 25 minutes. Meanwhile, separate the broccoli heads and boil.

To test for doneness, prick through with a bamboo skewer; if transparent juice flows out they are done. Let sit for five minutes, remove the toothpicks and slice in rounds. Serve on a plate and garnish with broccoli and cherry tomatoes.
