Pressure cooker makes beans a breeze / JAPANESE HOME COOKING

FRESHLY HARVESTED beans are hitting the stores. Cooking them in a pressure cooker reduces the time it takes to enjoy this star "slow food."

INGREDIENTS
(each recipe serves four)

Beans with vegetables:

* 150 grams soybeans (daizu)
* Piece of kombu kelp (12 x 5 cm)
* 5 grams sliced dried shiitake mushrooms
* 1/2 carrot (70 grams)
* 50 grams white konjac (konnyaku)
* 1 cup water
* 2 Tbsp sugar
* 2 tsp soy sauce
* 1 tsp salt

Bean salad:

* 100 grams white kidney beans (daifuku-mame)
* 1 cucumber
* 1/2 red bell pepper
* 1/2 purple onion
* 1 stalk celery (60 grams)
* Dressing: 1 Tbsp vinegar, 1 Tbsp cooking oil, 1/2 tsp salt, dash of pepper

METHOD

Beans with vegetables: Wash soybeans and soak in plenty of water for six to seven hours. Cut kelp and shiitake in 1-cm squares with scissors. Dice carrot and konjac into small chunks.

Place drained soybeans into pressure cooker with other ingredients. Cover with a fushokufu sheet (absorbent cooking paper) to absorb the froth, place a drop lid on top and then close the pressure cooker lid.

Turn on heat. When the pot comes under pressure and the top starts to spin, cook for 3 minutes. Turn off heat and leave unopened until the pressure is reduced. Open the lid and stir well.

Bean salad: Wash beans and soak overnight in water. Pour 500 cc of water into a pressure cooker. Place beans in the sieve included with the cooker, or place a tea cup in the bottom and place the sieve containing the beans on top of the tea cup. Close the lid and turn on heat. When the pressure rises, cook for 4-6 minutes over low heat. Turn off heat and leave until the pressure subsides.

Mix the dressing. Pour half of it over the beans while they are still hot and set aside to cool. Cut cucumber, peppers and celery in 1-cm cubes. Chop onion. Mix beans and vegetables and toss in remaining dressing.
