Simmered taro is a popular autumn dish / JAPANESE HOME COOKING

SIMMERED YOUNG satoimo, or taro, is a popular autumn dish. "Those that are freshly dug are especially full of flavor," says Japanese cuisine expert Tatsuo Saito.
Since taro continue to grow while in the soil, now is the best time to get them while they are still in bite-size. To make the peeling process easier, Saito suggests using a microwave. It also prevents your hands from becoming itchy. If the seasoning appears strong, he says, "The amount of soy sauce may be reduced by 30 percent and that of mirin by half, but keep the sweetness. The sugar gives a shine to the satoimo."

INGREDIENTS
(serves three)

* 12 small satoimo
* 1 Tbsp cooking oil
* Zest of 1/4 yuzu
* 300 cc dashi stock
* 50 cc sake
* 3 Tbsp sugar
* 1 Tbsp sweet mirin sake
* 4 Tbsp soy sauce

METHOD

Wash satoimo thoroughly and remove dirt. Place in heatproof dish, cover with kitchen wrap and microwave at 500W for three minutes. Since they are hot, hold each with a paper towel and scrape the skin off with a table knife. If the satoimo is large, cut off both ends, peel and cut in half.

Pour cooking oil in a pot over a fire and stir-fry the satoimo until they are coated with oil and turn whitish.

Pour dashi stock and sake and bring to a boil. Remove the scum, cover with a paper lid and simmer at low heat for about 10 minutes. You can make a paper lid by cutting out wax paper or aluminum foil in a circle to fit in the pot and making a few air-vent incisions.

When the satoimo are almost soft, add sugar and mirin and simmer for another five minutes.

Add soy sauce and simmer for 10 minutes. Remove the paper lid when the liquid is reduced. Shake the pot to prevent the satoimo from burning and coat them with the sauce. Serve on a plate and sprinkle with grated yuzu zest.
