Spicy stir-fried eggplant and pork add zip to meal / JAPANESE HOME COOKING

EGGPLANTS are now in season, and a spicy stir-fry is sure to enhance your appetite. The vegetable plays the lead in this miso-flavored dish.
"The pork is used to supplement the flavor. Instead of the loin, the richer shoulder loin or back ribs may be used," says Tomoshige Ichikawa, a chef and restaurant owner.
When preparing, cut the eggplants last. If stir-fried immediately, there is no need to soak them in water to remove the bitterness. Since speed is the key to stir-frying, have the seasoning and other ingredients ready before turning on the stove. Tianmianjiang may be replaced by Hatcho-miso or inaka-miso. Add more sugar in this case. Red chili or chili oil may replace the doubanjiang.

Spicy Grilled Eggplant(Eggplant Recipe / Image)

INGREDIENTS
(serves four)

* 5 eggplants (400 grams)
* 100 grams thin pork loin slices
* 1/2 onion (100 grams)
* 10 grams ginger
* 20 shiso leaves
* Base seasoning (2 tsp sake; bit of salt, soy sauce and pepper; 1 tsp water)
* 1.5 tsp katakuriko starch
* Seasoning (1/2 tsp doubanjiang paste, 3 Tbsp tianmianjiang sauce, 1 Tbsp sake, 1 tsp sugar)
* 2 tsp sesame oil
* 4 Tbsp oil

METHOD

Cut pork into 2-cm-wide pieces. Rub in base seasoning and mix with katakuriko starch. Chop ginger. Cut onion into wedges and separate the layers.

Cut shiso in half lengthwise, then into 2-cm-wide pieces. Mix all ingredients for the seasoning.

Cut off the tip of the eggplants and cut in half lengthwise. Make parallel diagonal cuts along the skin and cut into 2-cm semicircular slices.

Heat 1 Tbsp oil in a frying pan and stir-fry the pork. Remove from the pan once the surface turns white. Add 3 Tbsp oil and the eggplant and stir-fry without moving the pieces too much with the chopsticks. Cook until golden.

Add onion and stir-fry. Add ginger and when spicy aroma rises, return the pork and add seasoning.

When the seasoning has coated all ingredients, add shiso and sesame oil.
