EGGS do not have to be just for breakfast: They can be transformed into a Chinese gourmet dish.
Chinese restaurant owner and chef Tomoshige Ichikawa suggests making a steamed egg dish seasoned with sesame oil and oyster sauce.
He notes there is a lot of room for improvising with the Chinese steamed egg, using different fillings and spicing it up with fried doubanjiang paste or chili oil.

INGREDIENTS:
(Serves four)

* 2 eggs (100 cc)
* 300 cc Chinese stock (or 1 tsp Chinese soup stock powder and 300 cc water)
* 2 tsp sake
* Pepper
* 4 rape flowers (40 grams)
* 40 grams crab meat
* 1 tsp sesame oil
* 2 tsp white cold-pressed sesame oil (or cooking oil)
* 2 tsp oyster sauce
* 2 tsp soy sauce

DIRECTIONS:

Wash rape flowers and cut into 1-cm pieces. Boil salted water and cook the stems and tips separately. Drain and immerse in cold water. Pat dry. Loosen the crab meat. Gently beat the eggs that had been left to sit at room temperature.

Bring Chinese soup, sake and pepper to boil before cooling to body temperature. Gently mix with egg without creating foam. Pour hot water in a steamer, heat until steam rises and turn the stove off. Lay a damp kitchen cloth inside and place an empty bowl on top. Make sure there is at least a 1-centimeter gap between the bowl and the steamer to let the steam rise. Pour the egg mixture through a sieve. Add the flower stems.

Place disposable chopsticks between the steamer's pan and lid to let out steam. Cook over medium heat for two to three minutes, then on low heat for 10-12 minutes and see if the mixture has set.

If firm, turn off the heat and place the flowers and crab on top and close the lid to warm. Remove the bowl. Heat the two kinds of sesame oil in a sauce pan and pour over the egg. Heat oyster and soy sauces in the same pan and pour on top.
