SPRING ROLLS, enjoyed in many parts of Asia, are also part of regular meals at home in Japan. Popular here are the deep-fried type with a crispy wrapper containing savory fillings.
If it is wrapped while still hot, the steam will soften the wrapper so it will tear easily and the moisture will cause the frying oil to splash.

How to Make Shrimp Spring Rolls

INGREDIENTS

*4 spring roll wrappers
*80 grams pork
*50 grams boiled bamboo shoots
*2 dried shiitake mushrooms
*70 grams bean sprouts
*1 green pepper
*1 and a half Tbsp oil
*Seasoning: 50 ml soup stock, half Tbsp each oyster sauce, soy sauce and sugar; one-fifth tsp salt, small amounts of sesame oil and pepper
*One-half Tbsp katakuriko starch (mix with 1 Tbsp water)
*2 tsp flour (mix with about 1 Tbsp water)
*Frying oil

Serves two

METHOD

Soak mushrooms in water. Cut softened mushrooms, bamboo shoots and green pepper into thin strips. Cut pork into 5-mm strips and wash the bean sprouts. Mix the seasoning.

Heat oil and stir-fry pork, bamboo shoots and mushrooms. Add bean sprouts, green pepper and seasoning. Add the starch-water mixture and bring the ingredients together to make the filling, spread on a tray and cool thoroughly.

Position a corner of a wrapper toward you and place the filling a little closer to you from the center. Fold the closest corner to you first followed by the left corner. Roll once and fold the right corner. Apply flour-water mixture on the sides of the remaining corner, paste and place the seam face down.

Heat oil to 170 degrees and fry the rolls. Maintain medium heat and raise the temperature until the rolls are crisp and golden. Frying at a high temperature from the beginning will result in a burned outer wrapper
