Matsutake grow under trees and are usually concealed under fallen leaves and/or the duff layer.
It forms a symbiotic relationship with the roots of a limited number of tree species.
In Japan it is most commonly associated with Japanese Red Pine.

However in the Pacific Northwest it is found in coniferous forests made up of one or more of the following: Douglas Fir, Noble Fir, Shasta Fir, Sugar Pine, Ponderosa Pine and Lodge Pole Pine.

 

 


Further south, it is also associated with hardwoods, namely Tanoak and Madrone forests.
The Pacific Northwest and other similar temperate regions along the Pacific Rim also hold great habitat producing these and other quality wild mushrooms.

松茸ご飯 -Matsutake Gohan-

Matsutake gohan is seasoned rice with matsutake mushrooms. Matsutake is a Japanese autumn deicacy, and matsutake rice is the most popular matsutake dish.

Ingredients:

  • 2 1/2 cups Japanese rice
  • 2 1/2 cups dashi
  • 1/4 lb matsutake mushrooms, wiped and trimmed
  • 1 aburaage (deep-fried tofu)
  • 2 Ttbsp sake rice wine
  • 2 Tbsp soy sauce

Preparation:

Put the rice in a bowl and wash it with cold water. Repeat washing until the water becomes clear. Drain the rice in a colander. Put rice and dashi in a rice cooker and set aside for 30 minutes. Shred matsutake mushroom lengthwise. Cut aburaage into thin strips. Add matsutake, abura-age, soy sauce, and sake in the rice cooker and stat cooking the rice.
