Hinamatsuri is one of Matsuri in Japan and Mar 3, every year is the day.
Foods that go on the hinadan itself, for the dolls, as well as being served to the participants:

* the amazake or “sweet sake”
* the hishimochi or diamond-shaped mochi cakes that go on the little tables
* the round pink and white mochi that goes on the round stands; often folks use sekihan for the last.

Yuba or bean curd layer (Tochigi Prefecture)

When soy milk is boiled, a thin layer forms on the surface. Yuba is made by gently scooping off this layer. It first came from China along with tofu and has since developed as part of the Japanese food culture. Yuba can be dried and wrapped around fillings, or it can be added to stews and cooked dishes, or even eaten with soy sauce and grated wasabi (Japanese horseradish), just like sashimi. These days, yuba is regarded as a highly nutritious food with the added benefit of being easy to cook. Along with Nikko (Tochigi), Kyoto is also famous for producing yuba. In historical cities like these, yuba dishes have been popular for generations and long-established yuba restaurants remain extremely busy. How about giving this traditional taste a try?

Karaage (唐揚げ or 空揚げ or から揚げ) is Japanese cooking technique in which various foods — most often meat, and specifically chicken — are deep fried in oil. Small pieces of the food are marinated in a mix of soy sauce, garlic, or ginger, then lightly coated with a seasoned wheat flour or potato starch mix, and fried in a light oil — similar to the preparation of tempura.

Tumbling down head over heels near the summit of a 2,000-meter mountain is the most fun I've had in ages. On a Monday, the sparsely peopled ski runs at Mitsumata resort in Niigata Prefecture were knee-deep in feather-soft powder snow: perfect conditions for cushioning even the nastiest of falls. An amazingly cheap weekday JR package deal that included a day-return shinkansen trip from Tokyo Station and a one-day ski pass made this trip painful on neither the pocket nor the posterior. The only difficult thing about the experience was getting up at 5:15 a.m. in time for the 7:00 a.m. departure to Echigo-Yuzawa. (Japan Times)

Four fires kill seven in 24 hours

A series of fires from late Friday night through Saturday morning killed seven people in Hiroshima, Wakayama and Hyogo prefectures, police said. Four bodies were found after a fire broke out at 10:50 p.m. Friday in the home of Zenichiro Shinkado, 88, his wife, Haruko, 84, and two of their sons in Shobara, Hiroshima Prefecture. The fire destroyed the residence and an adjacent barn, the police said. (Japan Times)

Feb 13K-pop takes on the world while J-pop stays home
Last week, the Fuji TV newsmagazine "Mr. Sunday" looked at Korean pop's success in Japan from two angles. Taking a street-level perspective, the show's host, Seiji Miyane, hung out in Tokyo's Okubo district, which has become "the new Harajuku" because young Japanese women flock there to rub up against Korean culture. Miyane interviewed a group called KINO (K-pop IN Okubo), made up of young Korean men who learned Japanese and then came to Japan on their own to become stars. They don't have a management deal yet, but given the enthusiasm of the female fans who pack their small-venue shows, it's only a matter of time. (Japan Times)

top Kremlin official on Saturday slammed Japan's recent statements on the disputed Kuril islands, telling the Japanese foreign minister that talks on the island chain were "losing meaning." The Russian president's chief of staff, Sergei Naryshkin harshly upbraided Japan's top diplomat, Seiji Maehara, over Tokyo's outraged reaction to a visit by President Dmitry Medvedev to the islands in November last year. Tokyo's position had "led to a situation where continuing a discussion of the territorial problem is losing meaning," Naryshkin was quoted as saying by the RIA Novosti news agency, citing a Kremlin statement. TODAY WE feature two vinegared dishes: "shichifuku (seven lucky) namasu" and "nanten ikura" (salmon roe). A namasu dish is a salad of vegetables or fish strips with a vinegar dressing. Cooking expert Atsuko Matsumoto says of the seven-ingredient version: "My family loves it. So I make plenty." She added that the nanten salmon roe gets its name from a resemblance to the bright red berries on the "nanten" shrub.

Sasakamaboko (Miyagi Prefecture)

Kamaboko (steamed fish paste) is made by grinding up the white meat of fish, kneading it with salt, mirin (sweet cooking rice wine), sugar and starch and then steaming or roasting. Sasakamaboko, however, is named after its bamboo (sasa) leaf shape, and the marks left from toasting. A specialty of Miyagi, it is a popular gift or souvenir. The most famous sasakamaboko is from Sendai, where rows of shops have prepared their home-made style for years. It is also produced in Shiogama, Ishinomaki, Kesennuma, Watari and Onagawa. Some say that it originates from minced fish made into paste by hand and grilled in order to preserve the seasonal catch of flounder.

The town office of Takaharu, Miyazaki Prefecture, on Saturday lifted most of its evacuation orders issued last week for nearly 1,200 residents near the erupting Shinmoe Peak. "Now we believe there is only a low risk that a very large eruption and pyroclastic flow could occur," Takaharu Mayor Mitsuhiro Hidaka said. (Kyodo)
