Toshikoshi-Soba (年越しそば)

Around 11:00 pm on Ōmisoka at home, people often gather for one last time in the old year to have a bowl of toshikoshi-soba (年越しそば) or toshikoshi-udon (年越しうどん) together—a tradition based on people's association of eating the long noodles with “crossing over from one year to the next,” which is the meaning of toshi-koshi.
While the noodles are often eaten plain, or with chopped scallions, in some localities people top them with tempura. Traditionally, families make Osechi (おせち) for new year day because cooking during the first 3 days of the new year is not a good thing for Kami of kitchens. But nowadays, most of families buy Osechi, cook ordinary dishes, or just don't know that custom.

COLD WEATHER makes daikon more tempting. But it is not easy to prepare root vegetables like radishes so that they fully absorb the flavor of the "dashi" broth.
"Slicing the daikon more thinly is a fail-safe way," says cooking expert Atsuko Matsumoto who suggests new ways to make traditional dishes.

She likens the cooked daikon slices to "usurai," thin ice that forms in early winter, and calls this simmered winter dish "usurai-ni."
Matsumoto also offers a tip for cooking daikon the usual way, in thick slices. Boil the thick slices of daikon in water before adding them to a steaming dashi stock to finish. Heating both before blending them allows the flavors to seep to the center of the daikon.

"ANKAKE" IS a dish where a thick sauce, called "an," is poured over various ingredients. Together the sauce and ingredients create a rich flavor.
"Ideally, the sauce should be smooth with a certain firmness," says Japanese cuisine expert Tatsuo Saito, who here offers a recipe for "agedashi-dofu," or deep-fried tofu.
An sauce also goes well with warm, fresh "yuba" (soy milk skin), boiled Chinese cabbage and pork or "tamagoyaki" (rolled omelet).

Public's affinity for China drops to record low 20%: survey

The number of Japanese who feel friendly toward China dropped to a record low 20 percent in a poll conducted by the government, down 18.5 percentage points from the previous survey last year, the Cabinet Office said Saturday. Meanwhile, those who said they do not have friendly feelings jumped 19.3 points to 77.8 percent, a record high since the survey began in 1978, according to a public opinion survey on foreign affairs. Questionnaires were sent to 3,000 adults throughout the country, with 65.1 percent providing replies. (Japan Times)

The incredible media coverage of the fallout following the drunken brawl involving kabuki's "prince" Ebizo Ichikawa is due to the general public's jealousy of the star's fame, explains weekly tabloid Spa! (Dec. 14). To recap, on the night of November 25, an intoxicated Ebizo became engaged in a confrontation at a bar in Tokyo's Nishi Azabu district with an individual known to him. The 33-year-old star wound up receiving a thorough beating, which resulted in a bloodied face, chipped tooth, and broken left cheek. It was widely reported that Ebizo was out of control, exhibiting boisterous behavior that at one point included making members of his party drink tequila out of an ashtray. (Tokyo Reporter)

The Nobel Prize Award Ceremony was held at the Stockholm Concert Hall on Friday, with Japanese scientists Ei-ichi Negishi and Akira Suzuki receiving medals and diplomas in chemistry from King Carl XVI Gustaf. Negishi, 75, is a professor at Purdue University in the United States and Suzuki, 80, is a professor emeritus at Hokkaido University. The two won the 2010 Nobel Prize in chemistry along with American chemist Richard Heck, for their work on reactions to create complex organic compounds through what is called palladium-catalyzed cross coupling. Formally clad in swallowtails and white ties, the Nobel Prize winners walked onstage and seated themselves in bright red chairs as the Royal Stockholm Philharmonic Orchestra played a march by Mozart.
