Shogayaki, sauteed ginger pork / Japanese Home Cooking
Today let's sautee slices of meat so that they turn out soft and fragrant. Shogayaki, sauteed ginger-flavored pork, is a popular dish throughout the year.
"You ed up overcooking the meat or burning the sauce if you panic. You need to work out a plan beforehand to stay calm," says Japanese cuisine expert Tatsuo Saito. Cooking the pork in two stages is a key to success. Saito's method gives the dish a clear taste so that it also goes well with box lunches.

One-pot penne with salmon and broccoli / JAPANESE HOME COOKING
EVEN THOUGH it follows the one-pot method, this penne with salmon and broccoli is not an instant dish. Cooking expert Masayo Waki came up with this effortless dish for busy people who want to eat healthy.
"I chose a cream-type sauce to make use of the stickiness of the cooking water," Waki says.
She adds that the dish will not work with items that require smoothness, such as spaghetti or tomato sauce. Short pastas, such as penne or macaroni, are recommended.
Ingredients added to the dish include onion in addition to salmon and broccoli. Bacon, spinach and various mushrooms may also be used. You will feel an autumnal atmosphere when you eat this meal.

In Japan, healthy minds rejuvenate in healthy forests
Oct 09 | In Japan, healthy minds rejuvenate in healthy forests (Globe & Mail) |
Many of us have been forest bathing before, we just didn't know it. Forest bathing is translated from the Japanese shinrin-yoku, which has been defined as "taking in the forest atmosphere." While the good, old-fashioned term "walk in the woods" still applies in North America, shinrin-yoku has slowly made its way into the vernacular in Japan since a government agency coined it in 1982. More recently, Japanese scientists have started quantifying the impact forest bathing, and its more clinical-sounding cousin, forest therapy (shinrin-ryoho), can have on humans. |

Senkaku video to stay under wraps
Japan Times - Oct 9, 2010
The Democratic Party of Japan-led government will for the time being not release video footage of last month's collisions involving a Chinese trawler and Japan Coast Guard patrol boats in the East China Sea, sources said Friday. The stance reflects concerns that its release would further damage Japan-China relations, which soured after the arrest and detention of the trawler skipper, the sources said. Bilateral tensions appear to be slowly easing, as seen by the recent departure of two Chinese fisheries patrol boats near the Senkaku Islands, which Japan controls but China claims. (Japan Times)
