BUYING reasonably-priced frozen or thawed tuna may be an option for home cooking. A good way to enhance the flavor of akami, the lean part of tuna, is to serve it as zuke, marinated in soy sauce. It began as a way to preserve tuna back when there were no refrigerators.
"The rich texture is appealing," says Japanese cooking expert Tatsuo Saito. Choose sashimi fillets in vivid red with neat lines. Slice them by moving the kitchen knife back and forth in small motions.

Will Edo Castle's tower rise again?
Japan Times - Jul 18, 2010

What does Tokyo have as a genuine landmark? Well, there's 52-year-old Tokyo Tower, but that's not the draw it once was. Or there's Tokyo Sky Tree, which, at 603 meters high, is set to be the world's tallest broadcasting tower when it's completed soon. But so what? What Tokyo really needs is a historical monument symbolizing the essence of the Japanese spirit, culture and lifestyle, argues a Tokyo-based citizens' group whose aim is to rebuild what it considers the ultimate symbol of Tokyo: the main tower of Edo Castle. "FOR THE BEST way to cook meat, ask the meat itself," says cooking expert Masayo Waki, who suggests piccata, an Italian dish that encases the flavor of lean meat in egg coating. Veal and white fish are also suited to the dish.
Instead of the usual method of rolling the meat in flour and then dipping it in beaten egg, Waki only uses the egg coating that will control the heat transfer and tenderize the meat.

Jul 10An odor by any other name (Japan Times)
Draw a big breath and admit it. Japan smells. And what place doesn't? Take my hometown, for example, located close to Nowheresville, Illinois. The local aroma is a mix of clean living and hog manure, a tricky blend at that, one which my wife says I carried with me to Japan. "But it wore off," she says. "Half of it anyway." I tell her she had a special fragrance too, back when we first met. She smelled of mikan, miso soup and pickled radish. I don't know if I was in love or just hungry. And if she'd smelled like chocolate, we might have rushed from introductions straight to the altar.

Beatles' 'Sgt. Pepper' album cover mystery a piece of Japanese history
Japan Times - Jul 10, 2010

Who owns the Sony TV that appears on the cover of the Beatles' famous "Sgt. Pepper's Lonely Hearts Club Band" album? The long mystery was recently solved by Yasuharu Muramatsu, 47, curator of Okazaki City Mindscape Museum in Aichi Prefecture. He has an invoice apparently for the TV addressed to Paul McCartney. Released in 1967, "Sgt. Pepper" was recorded after the group returned from performing concerts at the Nippon Budokan arena in Tokyo from June 30 to July 2 in 1966. July 2 marked the 44th anniversary of the Tokyo concerts - the Beatles' only visit to Japan. (Japan Times)

A noodle is a type of food with a thin and elongated shape made from unleavened dough that is cooked in a boiling liquid.
Depending upon the type, noodles may be dried or refrigerated before cooking. The word derives from the German Nudel (noodle) and may be related to the Latin word nodus (knot).
Noodles often take the place of rice in a meal. However, the Japanese appetite for rice is so strong that many restaurants even serve noodles-rice combination sets.
